Everyone has a favorite recipe. Regarding deserts, this is my favorite one. I made it so many time, that I can tell it even sleeping :) It's not the most healthier desert recipe, but it's the desert that it's finishing the faster in our home.
So, here we have the ingredients:
1 cup glutten free all purpose flour
1 cup walnuts soaked before (4 hours soaking)
1 cup Nutella
1/2 cup your favorite sweetener (I use xylitol, but it's also suitable organic cane sugar)
3/4 cup cocoa butter (or you can use ghee butter if you avoid dairy; and if you don't it, use organic raw butter from pasture cows)
1 full tablespoon cocoa powder
3 organic eggs
1 teaspoon vanilla extract
Then pour all the ingredients in blender and mix them well.
Keep this mixture in fridge, as I hope you've already used with my recipes, at least 12 hours.
Preheat the oven to 170-180 Celsius degrees for about 15 minutes. Grease a baking tray (enamel or glass made) with cocoa butter or ghee butter. Or just put a parchment cooking paper on the bottom of the tray without greasing it, because the dough for this cookies is a very greasy one.
Take out the dough from the fridge, make by hand small balls, put them in the tray and press on the balls just a little with your fingers, until its become flat. Don't make its to flat, because in the over its become flatter due to temperature.
If you remain dough, don't keep it at room temperature, put it back in the fridge until the first cookies are baked, because otherwise the dough will became too soft.
So, put the tray in the over, low down the temperature at 160 degrees and keep it no more that 10-15 minutes. This kind of cookies are ready very fast, and you need to be careful, 2 or 3 minutes more in the over will burn the cookies.
Try not to eat the cookies hot! I know that the smell in the kitchen will get you crazy and all you will want is take a bite, but it's better to wait until the cookies are cooled.
