Almond Cookies Recipe



As I've already told you, my son has low gluten intolerance, so this cookies recipe is a gluten free one. Here there are the ingredients:

250 grams gluten free all purpose baking flour
250 grams pasture raised cow butter (or ghee butter)
150 grams almonds soaked before (best soaking time for almonds is between 8 and 12 hours; after 12 hours they could sprouting)
2 free range eggs
1/2 teaspoon aluminium free baking soda
xylitol (or bio cane sugar) mixed in a blender until it became powder)

The first step is to chop the soaked almonds in a food processor until you have a rough flour.
Put the almond flour and the rest of the ingredients (except xylitol) in a bowl, and mix them using a folk until the mixture is well homogenized. Put the bowl with this dough in the fridge for at least several hours (best 12 hours).

Make by hand small cookies any shape you like and cook them in oven, on pergament paper, at 170 degrees (or lower) for 15-20 minutes. 

When are ready, powder the cookies with fine xylitol or fine cane sugar, for a sweet taste. If you don't want a sweet taste, eat the cookies just like that!

I want to tell something more, which is maybe the most important thing about this recipe. You don't have to use for this cookies only almonds, you can use all kind of nuts you like or which grows local in your country or the area you are living in. Export foods are irradiated for killing microorganisms, so is better to by local, when it comes to food. In may case, I should use walnuts grown in Romania, instead of almonds coming from USA or Iraq. If you live for example in Australia, use macadamia. You got the idea :) Whatever you choose, don't forget to soak the nuts before use them in a recipe. And the most important thing about soaking: different nuts, different times for soaking!
